

Enchilada Bake

Ingredients
- 1/2 pound ground fake meat
- 2 C kidney beans
- 1 C finely chopped onion
- 1 minced garlic clove
- 5-6 sliced mushrooms
- 1 green bell pepper chopped
- 2 cans 14.5 oz. stewed tomatoes
- black olives
- 1 T chili powder
- 1 t cumin
- 1/8 t red pepper flakes
- 8 corn tortillas
- 1 3/4 C graded cheddar or jack cheese
- 1/2 C plain yogurt
Instructions
1) Combine "meat", onion, garlic, mushroom, and bell pepper. Cook until "meat" is browned.
2) Add beans, tomatoes, and spices.
3) Simmer uncovered for 20 minutes (should be thick).
4) Layer in large glass or enamel pan 4 tortillas, half "meat" sauce, 1/2 yogurt, 3/4 C cheese. Repeat. Top with sliced black olives.
5) Bake 20 minutes or longer (if juicy) at 350 degrees.
